Recipe

INGREDIENTS

- 1 kg chicken thighs or pork belly, cut into serving pieces
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 1 head of garlic, minced
- 1 tsp black pepper
- 2 bay leaves
- 1 tbsp cooking oil
- 1 cup water

PROCEDURE

1. In a large bowl, mix together the soy sauce, vinegar, garlic, and black pepper. Add the meat and marinate for at least 30 minutes, or up to overnight for a stronger flavor.

2. Heat the cooking oil in a large pot over medium-high heat. Add the marinated meat and cook until browned on all sides, about 5-7 minutes.

3. Pour in the marinade and add the bay leaves and water. Bring to a boil, then reduce the heat to low and let simmer for 30-40 minutes or until the meat is tender.

4. Serve hot with steamed rice and garnish with chopped spring onions, if desired.
