INGREDIENTS
- 1 lb boneless chicken thighs, chopped into small pieces
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 2 tbsp vinegar
- 1 tbsp calamansi juice (or lemon juice)
- 2 tbsp mayonnaise
- 2 tbsp vegetable oil
- Salt and pepper, to taste
PROCEDURE
1. In a pan, heat the vegetable oil and sauté the garlic and onion until softened.
2. Add the chopped chicken and continue cooking until the meat is browned and crispy.
3. Add soy sauce, vinegar, and calamansi juice and continue cooking for a few minutes until the liquid has evaporated.
4. Season with salt and pepper to taste.
5. Remove from heat and stir in mayonnaise.
